The first beer fermented with a wild yeast mixture in Estonia!
To put it simply, the wild yeast mixture could be “fermented as it went, without the addition of artificial yeast”, but that would not be quite right now. We in Brettanomyces (or brett or literally “British mushrooms”) do not live in the form of natural yeast on berries and fruits, as the master brewer would like. This first stock still needs to be bought in, although it will reproduce later in the laboratory. The result is a vinegarlly sour but very exciting beer for those who are not afraid to experiment with sour flavors.
